Abstract
Holographic interferometry has been applied to the study of crystal growth in gels. With this technique, it is possible to observe how the mass transfer induced by crystal nucleation occurs. Also, the discontinuous behaviour of such mass transfer, which had been recently proposed, seems to be confirmed even with the resolution power of this technique.
