Abstract
This work aims to present an approach to the study of Roman rotary querns found in archaeological fishery environments in the Strait of Gibraltar: Baelo Claudia, Iulia Traducta (Algeciras) and Septem Fratres (Ceuta). In addition, it offers the results obtained from the sampling of the active surfaces of these mills. The existence of fish residue in the mills shows their use for the elaboration of fishmeal and flours and also for the refined fish sauces also known as hallec.
