Abstract

Nowadays, there has been an increase in the interest of the black chokeberry consumption (Aronia melanocarpa L.), thanks to their Iarge amount of compounds of biological interest, which provides it a high nutritional value with antioxidant, anti cancer and anti-inflammatory properties. Due to the fact that this fruit has recently begun to be commercialized, there are no specifically developed exhaustive extraction and analysis techniques described in the literature. In this work, an ultra sound-assisted extraction method of phenolic compounds and anthocyanins has been optimized, not only separately but also simultaneously. The multiple response has shown a level of effectiveness similar to the individual ones, which represents a considerable reduction in costs, time and work. The optimal conditions to extract both families of compounds at the same time were:54% metanol in water at pH 2.72 anda temperature of 69.4 °C, 70% amplitude, a cycle of 0.7 s anda sample/solvent ratio of 0.5:18.2 g:mL. The developed methods showed a high level of precision with coefficients of variation lower than 5%.Finally, they were successfully applied to commercial samples made from chokeberry.
